Cornish Game Hens with Blueberry Orange Sauce

Blueberry Orange Sauce


  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1⁄8 teaspoon salt, optional
  • ¼ cup orange juice
  • 1 cup fresh or frozen blueberries
  • 1 cup orange sections (about 2 oranges)


  1. In a cup combine sugar, cornstarch and salt
  2. set aside
  3. In a small saucepan bring orange juice and ¼ cup water to a boil
  4. Add blueberries and orange sections
  5. Return to a boil
  6. Cook until liquid is released from fruit, about 2 minutes
  7. Stir in sugar mixture
  8. Cook, stirring constantly, until sauce thickens, 1 to 2 minutes

Number of servings (yield): 2 cups
