Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1⁄2 teaspoon thyme leaves
  • 2 tablespoons white wine vinegar
  • 1⁄4 cup light brown sugar
  • 2 cups blueberries
  • 1⁄4 cup water
  • Pinch salt
  • Pinch black pepper

Instructions

  1. Heat oil in a deep skillet over medium heat.  Add onion and thyme.
  2. Reduce heat to medium-low; cook until onion is soft and starts to caramelize, stirring frequently, about 10 to 15 minutes.
  3. Stir in vinegar and sugar. Increase heat to medium.
  4. Add blueberries. Stir until they begin to pop.
  5. Add water or vodka, salt and pepper.  Simmer until thickened, about 2 minutes, until thickened.  Remove from heat.  Let cool. Chill; store in refrigerator.

Recipe Tip

Uses: spread for sandwiches, toast or crostini; sauce for poultry

Yield: 1 1/3 cups

Variations

Use blueberry-infused vodka instead of water
