Curried Blueberry Ketchup
Recipe: Curried Blueberry Ketchup

Ingredients
- 2 cups fresh or frozen blueberries
- ½ cup sugar
- 2 teaspoons curry powder
- 1 cup ketchup
Instructions
- In saucepan combine blueberries, sugar and curry powder with a little water
- Bring to a boil and simmer, stirring often until mixture is thick and syrupy, but not too much so
- It will thicken as it cools
- Remove from heat and take to processor
- Blend till smooth and then add ketchup and process again
- Serve with potatoes or on a burger
