Recipe: Blueberry Buckle

Ingredients

  • ¾ cup sugar
  • ¼ cup shortening
  • 2 eggs
  • ½ cup milk
  • 1-½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1-½ cups blueberries
  • ½ cup sugar
  • 13 cup flour
  • ½ teaspoon ground cinnamon
  • ¼ cup soft butter or margarine

Instructions

  1. Mix ¾ cup sugar, shortening, eggs and milk until well blended
  2. Stir in 1-½ cups flour, baking powder, salt, nutmeg and cloves
  3. Gently fold in blueberries
  4. Spread batter into a greased 9-inch square pan
  5. Combine remaining ingredients and mix until crumbly
  6. Sprinkle crumbs over batter
  7. Bake in a preheated 375ºF oven for 45 to 50 minutes or until top springs back when lightly touched
  8. Serve warm, cut into squares
