Recipe: Tangy Blueberry Chutney
Ingredients
- ½ cup chopped onion
- ¼ cup sugar
- ¼ cup golden raisins
- ¼ cup cider vinegar
- 1 cup fresh blueberries, divided
Instructions
- In a small saucepan, combine onion, sugar, raisins and vinegar
- Bring to a boil
- Reduce heat and simmer until sugar dissolves, about 3 minutes
- Add ½ cup of the blueberries
- Simmer until saucy, about 5 minutes
- Add the remaining ½ cup blueberries
- Simmer 1 minute longer
- Serve with chicken, pork tenderloin or ham
