I can’t believe summer is already gone and the kids are back in school. With busy schedules in full swing again, on-the-go meals and snacks need to be quick and easy. This doesn’t have to mean a bag of chips or frozen pizza bites, though! Afterschool snacks can be healthy and just as easy to prepare. I like to make these Blueberry Topped Rice Cakes for the kids in between activities – they’re ready in no time and are a fun treat.
