Blueberry Bellini

Kicking tradition to the curb, this blueberry bellini is anything but ordinary (and so simple to make)! A dash of simple syrup blended to perfection with frozen blueberries added to the bubbly deliciousness of Prosecco makes this blueberry bellini the perfect cocktail for your next holiday get together. Bonus points if you make a great toast to get the party started!


  • 1 bottle Prosecco
  • 2 cups frozen blueberries, thawed
  • ½ cup simple syrup
  • Raw sugar (optional)


  1. In a blender, puree blueberries and simple syrup until smooth. Taste and adjust sweetness to your liking.
  2. Combine blueberry puree and Prosecco
  3. Serve in sugar-rimmed champagne flutes, if desired.

Number of servings (yield): 8 Cocktails


Dip the rims of the champagne flutes in honey (or you can use caro syrup) and then in the raw sugar.
