Curried Blueberry Ketchup

Recipe by Joyce Doughty, Doughty’s Bistro, Boise, ID


  • 2 cups fresh or frozen blueberries
  • ½ cup sugar
  • 2 teaspoons curry powder
  • 1 cup ketchup


  1. In saucepan combine blueberries, sugar and curry powder with a little water
  2. Bring to a boil and simmer, stirring often until mixture is thick and syrupy, but not too much so
  3. It will thicken as it cools
  4. Remove from heat and take to processor
  5. Blend till smooth and then add ketchup and process again
  6. Serve with potatoes or on a burger

Number of servings (yield): 2.5 cups
